Christmas Pudding ( 3lb pudding)

Ingredients:-

4oz wholemeal flour

½ tsp salt ( optional )

3tsp mixed spice

1tsp ground ginger

1tsp cinnamon

½ tsp nutmeg

4oz breadcrumbs

8oz vegan margarine

4oz soft brown sugar

4oz dried apricot, chopped

4oz prunes, chopped

4oz currants

4oz sultanas

4oz raisins

1 cooking apple grated finely

1 medium carrot grated finely

juice and grated rind of a lemon

2tbs black treacle

3tsps baking powder

3tbs sherry
