Mushroom Tart
This recipe is taken from The Vegan Cookbook by Alan
Wakeman and Gordon Baskerville.
Ingredients:-
½ lb ( ¼ kg ) mushrooms
1½ pints ( ¾ litre ) soya milk
1 clove garlic
1 tsp salt
1 tsp freshly ground black pepper
Method:-
1. Wash and coarsely chop the mushrooms and
put them in a large saucepan with the soya milk. Bring quickly to
the boil, then reduce heat and leave to simmer, uncovered for 10 mins,
stirring often.
2. Meanwhile, skin and crush the garlic, add
it to the pan and stir well in.
3. Remove pan from the heat, transfer the
mixture to a blender, add th e salt and pepper and blend to a smooth,
frothy liquid. Return to the pan, reheat gently and serve. |
