Savoury Onion Tart
This recipe is taken from The Vegan cookbook by Alan
Wakeman and Gordon Baskerville.
Ingredients:-
1 pre-baked flan shell
1 oz margarine
2 cloves garlic
½ lb ( ¼ kg ) onions
½ lb ( ¼ kg ) firm tofu
8 fl oz ( 200ml ) soya milk
½ tsp freshly - grated nutmeg
salt and pepper to taste
Method:-
1. Put the margarine to melt in a frying pan
over a low heat.
2. Meanwhile, skin and finely dice the onions,
add to the pan and saute for a few minutes.
3. Skin and crush the garlic and
stir it in with the onions.Continue cooking till the onion is just
transparent but not yet beginning to brown. Remove from the
heat and set aside.
4. Coarsely dice the tofu and put it in a
blender. Add the cooked onion and garlic to the blender together
with the soya milk, salt and pepper to taste and blend to a smooth cream.
5. Pour the onion mixture into the flan shell,
smooth the top, sprinkle with the ground nutmeg and bake in the middle of
a moderate oven ( 350 degrees F or 177 degrees C or Gas 4 ) until the top
begins to brown, about half an hour.
