Vegetable and kidney bean stewThis is taken from a leaflet written by the Vegetarian Society of
Ireland entitled ' Quick and easy meatless recipes'. 1tblsp vegetable oil 75g/ 3oz mushrooms, sliced 1 small red pepper, de-seeded and chopped 1 carrot, scraped and diced 1 medium-sized courgette, sliced 1 stick of celery, sliced 1 small onion, sliced 2 tomatoes, skinned and quartered 365g/ 13oz tin red kidney beans salt and freshly ground black pepper
1. Heat the oil in a large saucepan and add the onion, pepper, carrot, courgette and celery. 2. Cook gently for 10 minutes with alid on the pan, then add the mushrooms, tomatoes, kidney beans and salt and pepper to taste. 3. Simmer for a few minutes more until the carrot is soft. |
