Chick Pea Croquettes

This is recipe with a bit of a quirk to it, which will certainly get you noticed..  It's inspired from Greece and is a wonderful idea.  It's tasty, interesting and colourful.  It's a recipe taken from a leaflet called ' A Simple Guide to Healthy Eating' from the Vegetarian Society of Ireland.

Ingredients:-

1/2 lb or 14oz tin

cooked chick peas

2 cloves garlic, finely chopped

2 tbspns chopped parsley

1 medium potato, cooked

tbspn soy sauce

squeeze lemon juice

seasoning

flour, for coating

vegetable oil, for frying


Method:-

1. Mash chick peas with garlic and potato.  Add parsley.

2.  Add soy sauce, lemon juice, seasoning.  Mix well.

3.  Roll mixture into croquette shapes in flour.  Leave in refrigerator for one hour if possible.

4.  Fry gently in oil until golden brown on all sides.   Serve with spinach, onion gravy and wholemeal bread.
