Lentil Savoury


Ingredients:-

175g/ 6oz red lentils

1tsp brown sugar

½ tsp mixed herbs

400g/ 14oz tin tomatoes

2 onions, chopped

2tblsp tomato puree

50g/ 2oz vegetarian margarine

½ tsp basil

salt and pepper

150ml/ ¼ pint sour cream

175g/ 6oz vegetarian cheddar cheese


Method:-

1.  Place the lentils in a pan with enough water to cover them.   Add the herbs and simmer until tneder.

2.  Saute the onion in the margarine until soft.  Add the lentils and all other ingredients apart from the cheese and cream.

3.  Simmer for 15 minutes and pour into a greased ovenproof dish.

4.  Slice the cheese, and place on top with the cream, then grill or bake at 180 C/ 350 F/ gas mark 4, until the cheese has melted.  Delicous served hot with a salad.
