Red
Bean Casserole
This requires a little extra preparation as the beans have to be
soaked overnight the night before. It takes a while to make but is very tasty and
worthwhile.
Ingredients:-
4oz red kidney beans
1 tblspn vegetable oil
1 medium onion, sliced
2oz mushrooms, sliced
1 carrot, finely sliced
2 tomatoes, fresh or tinned
1 teaspn Marmite
bayleaf
herbs, eg. parsley, marjoram or oregano
1/4 pint stock or water
seasoning
1. Soak the kidney beans overnight the day before you prepare
this.
2. Take the beans and boil them for 10 mins, then simmer for 40
minutes.
3. Heat oil, then fry onions for one minute.
4. Add celery, carrots and mushrooms. Stir-fry (
cook over a fairly strong heat, keeping the vegetables moving all the time) for a few
minutes.
5. Add sliced or chopped tomatoes, Marmite, herbs and bayleaf;
also add the stock or water and seasoning.
6. Bring to the boil and allow to simmer for approximately twenty
minutes, stirring occasionally. Add more liquid if necessary.
7. Serve with sauté potatoes, or rice or wholemeal bread and
green peas, cauliflower or any other green vegetables or green salad. |
