Foreword
Liscarroll Parent & Toddler Group, which started up in Liscarroll Community Centre in September 2002, has grown from strength to strength in providing a facility for our new little citizens who are making their first social contact in the community. It also benefits new Mothers/Parents who perhaps have just moved into the area or perhaps helps them to keep in contact with other “Mums” with children of the same 0-5 years age group. We classify ourselves as a Family Support Group where we openly discuss and share parenting experiences encountered along the way. We have organised Parenting Classes on Self-esteem, Discipline and Anger Management with children.
The main thrust of our group is to keep focused on child development through play, encompassing activities, which develop children in social, emotional, language, cognitive and physical development. In our first year we have exposed children to Art & Crafts, which are all recognised pre-writing skills. We have also developed language through play, storytelling, song and Music Therapy and everyone needs to socialise even if they are only a few months old! Dance and exercise will also become part of our itinerary as this promotes balance, co-ordination and physical development.
“The Pride of Liscarroll Cookbook” came about through searching for innovative ideas to fundraise for our group, which is run completely by volunteers. These funds will help to provide different activities and renew equipment and running costs of the group.

We would like to thank everybody who contributed to this project with their favourite recipes, helpful hints and even cures, in the community of Liscarroll and the North Cork Area! Without your recipes there would not be a Cook Book!
Again, there would be no cook-book but for the trojan work of Micton Hallihan, who gave us his technological expertise, and for formatting and designing this cook book and painstakingly checking our typing and proof-reading our proof-reading and keeping us organised and to a schedule. Also to his wife, Sheelagh Hallihan & Bizcom-Limerick who gave us their support, expertise and advice on printing and equipment.
A special thanks to Marion Cronin, for providing us with a brief overview of the history of Liscarroll and researching anecdotes. Also special thanks to Dan Canty, Liscarroll P.O., for his contribution on local history and place names.
