Carrageen Moss

This is actually a moss, found in the ocean. It is gathered and spread to dry for use. Mostly it is used either as a drink or a 'pudding'. As well as being very palatable - it is extremely good for you.

You will be able to get Carrageen locally. It will be yellowish in appearance, and dry. First thing to do is take a little of it and give it a good rinse, then soak it in water. The amount you use depends on what your intended use is, for a drink just a little pinch is sufficient - for a pudding use a little more. It swells when soaked.

Once it has soaked (you will see why just a small amount is needed) add the Carrageen to your required amount of milk in a saucepan. Add a little sugar and whatever flavouring you like, lemon or vanilla are popular, and bring to a boil, then simmer. After about 10 minutes - strain and discard the moss, and pour the remaining liquid into either mugs for drinking, or a mould to let it set into a pudding. With the pudding version to serve it with a spoon of jam, a trickle of honey or maple syrup, or with some fresh fruit, will make it very special.
