"Glenlara cheese" is ideal for snacking on crackers, rolls or as part of a nutritious sandwich. It is a perfect accompaniment to fruits such as grapes, apples, kiwis or tomatoes. Macaroni and Cheese

Using Glenlara cheddar cheese in this recipe means there are rich pockets of the finest Irish melted cheese throughout.

Ingredients:

1/2lb curly elbow macaroni

3 Tablespoons of butter

2 Tablespoons of flour

2 1/2 cups of milk heated

1/2 Teaspoon salt

1/4 teaspoon freshly ground pepper

1 1/2 cups grated Glenlara cheese

1/4 cup Parmesan cheese

1 slice bread

Instructions:

Heat oven to 375 degrees F. Grease a shallow baking dish. Cook macaroni according to package directions. Drain and rinse with cold water.

In the same pot, melt butter over low heat. Pour 1 Tablespoon into a small bowl, mix/stir flour. Cook, stirring constantly, until bubbly, about 1 minute. Gradually stir in milk. Add salt an pepper. Bring sauce to a simmer, simmer 3 minutes, stirring frequently. Add Glenlara grated Cheddar Cheese and stir until partially melted. Remove pot from heat and add macaroni and 2 Tablespoons of Parmesan cheese; stir until blended. Pour into prepared baking dish. Crumble bread to make coarse crumbs. Add crumbs and remaining Parmesan cheese to melted butter in bowl. Mix to combine. Sprinkle on macaroni misture. Bake 25-30 minutes, or until crumbs are browned and macaroni is bubbly at edges.

Makes 4-6 servings

Pizza

Scone base: 200g self raising flour, 85g margarine, pinch of salt, a little milk

Topping: 1 dessert spoon of oil, 6 tomatoes/1 tin of tomatoes, 50g-75g of grated Glenlara cheddar.

Ideal for children

Buttered white or brown bread with chicken, sliced tomato and grated Glenlara cheese on top. Toast these and it makes fod a delious nutritious snack anytime.
