Ingredients
Pancake mixture, made with 4oz flour etc.
2oz/50g sugar
3oz/75g butter
Juice of 2 oranges, strained
Grated rind of 1 orange and 1 lemon
2tbsps brandy
Slice of orange to decorate
Method
To make the pancakes, Sieve 4oz (100g) of plain (cream)
flour into a bowl with a pinch of salt. Make a well in the centre. Add in
1 egg, with ˝ pint of milk, gradually incorporating the flour from the sides.
Whisk to a smooth batter. Leave to stand , idealy for approx 30 mins. Whisk
again and mix in ˝oz (25g) of melted butter. Heat a fry pan, with a little
oil in it until it just begins to smoke. Pour in just enough of the mixture
to cover the base. Cook until browned.
