Ingredients

3 large fresh peaches...(or one 15oz can of peaches... drained)
Juice of 1 orange
2 tbsp. ground almonds
1/3 pint double cream, chilled and whipped
2 egg whites

Method

If using fresh peaches, put them in a bowl, pour over enough boiling water to cover. Leave for a minute. Remove the peaches with a slotted spoon and place in a bowl of cold water, and peel off the skins. Half each peach and remove the stone. Put the peaches in a liquidizer with the orange juice and blend until smooth. Beat in the ground almonds and the double cream. Whisk the egg whites stiffly, then gently fold into the peach mixture with a metal spoon. Spoon the mixture into tall glasses and serve with small macaroons or shortbread fingers.
