Ingredients

2 large red apples
2 large ripe pears
Juice of 1 lemon
2 sticks of celery
400g/1 Lb large cooked prawns
2 bunches watercress
5 tbsp. Greek yoghurt
3 tbsp. mayonnaise
3 tbsp. tomato ketchup
2 tsp. Worcestershire sauce
4-5 drops Tabasco

Method

Core and dice the apples. Peel core and dice the pears. Put the fruit into a bowl and sprinkle with lemon juice. Trim the celery, cut into slices, and add to the bowl. Add in the prawns, and toss together. Wash and pat dry the watercress. Chill until needed. Mix together the yoghurt, tomato ketchup, mayonnaise, Worcester and Tabasco. Season and chill until required. Just before serving, sprinkle a little of the watercress over each serving, and drizzle a little of the sauce.
