Ingredients

12oz tagliatelle
2oz butter
2oz parmesan cheese
Grated rind 1 lemon
2 tbsp. chopped fresh basil & parsley
3 - 4 tbsp. vegetable stock
Parmesan shavings and basil leaves to garnish

Method

Cook the tagliatelle according to the instructions on the packet. Meanwhile, mix the butter with the cheese , lemon rind and herbs. Drain the pasta, and toss with the butter mixture. Return it to the saucepan and add the vegetable stock. Gently heat through. Serve immediately garnished with parmesan shavings and basil leaves.

Chef's Tips

This pasta dish is ideally accompanied by a crisp green salad. An Italian red wine, Corti Primitivo, is excellent with this dish. The wine itself is a light fruity red, and will not overpower the delicate flavours of the dish.
