Ideally, it's best to use a sandwicher toaster applicance in making these snacks. Cooking time is 3 mins unless otherwise stated.

Tuna Melt

Ingredients

100g/4oz canned tuna, drained
3 level tbsp mayonaisse
salt & pepper
100g/4oz mild cheddar cheese, thinly sliced
4 slices bread, buttered on one side

Method

Combine the tuna and mayonaisse. Season with the salt and pepper to taste. Spoon the mixture onto two slices of bread and spread out evenly. Divide the cheese between the two, and cover with the remaining slices of bread.
Variation: Omit the cheddar and add 2oz sweetcorn, or substitute mayonaisse and cheddar for 2oz/50g cream cheese.

Corned Beef Hash

Ingredients

2 slices corned beef
1 4oz tin baked beans
100g/4oz mild cheddar cheese, grated
4 slices bread, buttered on one side

Method

Place corned beef on two slices of bread. Divide the baked beans between the two. Sprinkle grated cheese over the top, covering with the remaining slices of bread.

Cottage Cheese & Pineapple

Ingredients

75g/3oz cottage cheese
50g/2oz pineapple, cubed
4 slices bread, buttered on one side

Method

Mix together the cottage cheese and the pineapple. Divide the mixture between two slices of bread, and cover with the remaining slices.

Haiwaiian Ham

Ingredients

2 slices ham
50g/2oz pineapple, cubed
100g/4oz cheddar cheese, thinly sliced
4 slices bread, buttered on one side

Method

Place a slice of ham onto each slice of bread. Cover with the pineapple and then the cheese and cover with the remaining slices of bread.
May require up to 4 mins cooking time

Danish Blue & Mushrooms

Ingredients

20z/50g mushrooms, sliced
2oz/50g blue cheese (e.g: Danish Blue)
2 spring onions chopped
4 slices bread, buttered on one side

Method

Slice the cheese thinly and place onto two slices of bread. Put the mushrooms and spring onions onto the sandwich and cover with the remaining slices of bread.
May require up to 4 mins cooking time

Pizza Surprise

Ingredients

4 tbsp chopped tomatoes, drained
Dried Oregano, pinch
Salt & herb pepper
2oz/50g mozzarella, grated
4 slices of bread

Method

Mix together the tomatoes and oregano, season with salt and herb pepper. Divide between two slices of bread, sprinkle over the mozzarella and cover with the remaining slices of bread.
May require up to 4 mins cooking time
Variation: Add a slice of salami to each sandwich, or another pizza topping of your choice

Vegetarian Delight

Ingredients

2 tbsp chopped red pepper
2oz/50g sweetcorn
4 spring onions, chopped
4oz/100g cheese (cheddar/red leicester)
pinch mixed herbs
4 slices of bread

Method

Mix together red pepper, sweetcorn, mixed herbs and spring onion. Spread mixture evenly between two slices of bread, slice the cheese thinly and put onto sandwich. Cover with the remaining slices of bread.
May require up to 4 mins cooking time
