Pizza

Pizza was invented in Naples more than 200 years ago.

Mozzarella cheese is melted onto a base and topped with meat, fruit and vegetables.

Italians like to top it with a spicy meat called pepperoni.

The idea behind pizza was that it was a cheap but filling meal.

There are over 500 different types of pasta. Here are just a few!

Homemade Pasta

HERE'S WHAT YOU NEED:
  • 3 eggs
  • 2 pinches of salt
  • 1 3/4 cups (425 ml) pasta flour

HERE'S WHAT YOU DO:
Beat the eggs in a medium-size mixing bowl with a fork. Mix in the salt. Add the pasta flour, one handful at a time, mixing well each time.
Knead the dough for 5 minutes. Wrap it in waxed paper and let it rest for 10 minutes. Then, pass your dough through a pasta machine according to the manual directions.
OR
Gently roll the dough out as thin as you can on a floured surface with a rolling pin. Ask a grown-up to help you cut it into long, thin noodles with a sharp knife.
With the help of a grown-up, bring a large saucepan of water to a boil. Add the noodles and cook for 2 minutes. Strain out the water, then serve.
Serves 4 people

Pesto

HERE'S WHAT YOU NEED:
  • 2 cups (500 ml) fresh basil leaves, rinsed and patted dry
  • 1/4 cup (50 ml) pine nuts, sunflower seeds, or walnuts
  • 2 garlic cloves, crushed
  • 1 cup (250 ml) olive oil
  • 1/2 cup (125 ml) Parmesan cheese
  • Salt and Pepper to taste
  • 1 box spaghetti or fettucine, cooked according to package directions, or 1 recipe Homemead pasta cooked according to recipe directions

HERE'S WHAT YOU DO:
Put the basil, nuts, and garlic into a food processor or blender. Ask a grown-up to help you blend or process the mixture until the leaves are all chopped up.
Add the oil and blend or process until smoth. You may need to stop the machine, scrape the sides with a spatula, then blend or process again.
Add the cheese and salt and pepper. Then scoop the pesto into a large serving bowl and add the cooked and drained pasta. Toss well with tongs.
Serves 6 people an Italian noontime meal.
