Scrambled Eggless Egg


This recipe is taken from The Vegan Kitchen Mate.  It tastes good on toast but perhaps it is even better if left for a day.


Ingredients:-

1 tbs oil

12 tbs shallots or onion, diced

2 carrots, diced very small

250g tofu, crumbled

2 tbs sesame seeds, roasted

½ tsp salt,

2 tsp soy sauce

pinch pepper


Method:-

Saute onion until soft.  Add carrot and saute for three minutes.  Add crumbled tofu and all other ingredients.  Stir constantly for four minutes.
