More about our whiskey . . . . . . . . . .

Pure Pot Still . . . . . . . . . .

Very few whiskeys today are distilled using this age old, slow and

expensive method. The malt is distilled in traditional copper vessels

called pot stills in very small batches. Much of the flavour of the malt

is retained in pot distillation. The flavour of the whiskey is also greatly influenced by the shape of the pot still, in ways that are today, still not wholly understood. Each pot still is totally individual and so is the whiskey it produces.

Single Malt . . . . . . . . . .

The malt barley used in our whiskey was grown in the lush fields of southern Ireland.

It was lightly peated over traditional turf fires to impart the unique smokiness to the

whiskey. Our single malt whiskey is made from malted barley only and has not been blended with any other whiskey.

Single Cask . . . . . . . . . .

The most exclusive of all whiskeys. A single cask  was chosen, following extensive
tasting, from the thousands of casks maturing deep in the bonded cask which initially was used to mature bourbon. The cask has not  been mixed or blended with any other cask and after many long years mellowing it produced our unique and once off traditional malt Irish whiskey.
