is a sample recipe take from 'Eat With Joy'...
Pizza Base
This is a win, win pizza base as there
is no rolling involved and it tastes delicious
too!
- 2 tblsp olive oil
- 8 fl ozs / 200ml / 1 cup warm water
- 1tsp. unrefined caster (superfine)
sugar
- 1/2 sachet / 7g / 1 tsp. dried yeast
- 4 oz / 100g potato flour
- 4 oz / 100g brown rice flour
- 1 oz / 25g rice bran
- small pinch salt
Mix the olive oil, water, sugar and yeast
together in a small bowl and leave to bubble
up for about ten minutes in a warm place.
Mix the rest of the ingredients together
in a mixing bowl. Add the yeast mixture
to the dry ingredients and stir well. The
mixture should be too wet to roll out. Place
the mixture on a greased non-stick pizza
plate, 10 in / 24 cm diameter, or any non-stick
baking tray and flatten it out with a spatula
or spoon. Place the plate in a warm place
until the mixture reaches the top of the
pizza plate. Meanwhile preheat the oven
to 230C / 450F / Gas 8.
Bake the pizza base. It will only take about
10 minutes. Test to see if it is cooked by inserting
a skewer into the base at an angle. If it comes
out clean, the base is done. It should also leave
the sides of the tin and lift off easily from
the base when done. Complete the pizza with your
favourite toppings and return to the oven to finish
