Note: Instead of rhubarb, other fruits
can be used for this dish including apples and blackberries

8oz (225g) plain or wholemeal flour
5oz(150g) brown sugar
3oz butter (75g)
1 level teaspoon baking powder
2lbs rhubarb(900g)
2 tablespoons water

of flour only, try 4oz wholewheat flour and 4oz muesli - for a crunchy,
nutty result |
Method:
Place the flour in a large mixing bowl, sprinkle in
the baking powder.
Add the butter and rub it lightly into the flour using your fingertips.
When it all looks crumbly, add the sugar and mix it well.
Cut the rhubarb into small chunks. Place it in a saucepan and cook
over gentle heat until soft.
Grease a dish or ovenproof tray with butter. Add rhubarb to dish.
Sprinkle the crumble over the fruit.
Place it on a high shelf in the oven and bake it for 30-40 mins.
Serve with ice-cream, custard or natural yoghurt.
